Cut the chicken breast into bite-sized pieces and sauté in a non-stick pan over medium heat until fully cooked.
In a small mixing bowl, whisk together the Greek yogurt, minced garlic, sea salt, black pepper, onion powder, and half of the parmesan cheese to create the Alfredo sauce.
Toss the cooked chicken and steamed cauliflower in the yogurt sauce until every piece is thoroughly coated.
Cut the sourdough bread into small half-inch cubes and toss them with the olive oil in a separate bowl.
Transfer the chicken and cauliflower mixture into a small oven-safe baking dish.
Top the mixture with the oiled sourdough cubes and the remaining parmesan cheese.
Bake for 10-12 minutes, or until the bread cubes are golden brown and the sauce is bubbling.
Garnish with freshly chopped parsley before serving.
