PREPARATION
Preheat your oven to 400°F.
In a small bowl, combine the extra virgin olive oil, minced garlic, dried rosemary, dried thyme, sea salt, and black pepper to create a rub.
Place the pork loin roast on a baking sheet and coat all sides thoroughly with the garlic-herb mixture.
