Crispy plant-based protein bites baked until firm and loaded with earthy hemp hearts and bitter cacao nibs for a satisfyingly deep chocolate crunch.
INGREDIENTS
2 scoop Unsweetened chocolate plant-based protein powder
2 tbsp Hemp hearts
1 tbsp Chia seeds
1 tbsp Cacao nibs
0.25 cup Puffed quinoa
1 tbsp Unsweetened almond butter
0.25 tsp Sea salt
3 tbsp Unsweetened almond milk
PREPARATION
Preheat your oven to 350°F and line a small baking sheet with parchment paper.
In a medium bowl, whisk together the chocolate protein powder, hemp hearts, chia seeds, cacao nibs, puffed quinoa, and sea salt until well combined.
Add the almond butter and 2 tablespoons of almond milk, stirring with a spatula to form a thick, slightly crumbly dough.
If the mixture is too dry to hold together, add the remaining tablespoon of almond milk one teaspoon at a time until a dough forms.
Scoop the dough into 6 even portions and roll them into firm balls, then slightly flatten them onto the prepared baking sheet.
Bake for 8 to 10 minutes until the edges are just set and the bites feel firm to the touch.
Remove from the oven and allow them to cool completely on the pan, then transfer to the refrigerator for 15 minutes to achieve a chilled, crunchy texture.
