In the same skillet, add the sliced bell peppers and sauté for 3-4 minutes until they begin to soften.
Add the cauliflower rice and fresh spinach to the skillet, stirring constantly until the spinach is wilted and the rice is heated through.
Stir the lemon juice into the vegetable mixture to brighten the flavors.
Divide the roasted sweet potatoes and the vegetable mixture between plates or meal prep containers.
Top with the sliced chicken and fresh avocado slices before serving.
