PREPARATION
Peel the Russet potato and cut into 1-inch cubes.
Place the potato cubes and the whole garlic cloves in a pot of cold salted water, bring to a boil, and simmer for 12-15 minutes until fork-tender.
While the potatoes cook, season the chicken breast with half of the sea salt and black pepper.
Heat the extra virgin olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
Drain the potatoes and garlic, then return them to the warm pot.
Add the ghee, plain Greek yogurt, and the remaining sea salt and black pepper to the pot.
Mash the mixture until smooth and creamy, then stir in the freshly chopped chives.
