Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared wild salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7.5 oz Wild Sockeye Salmon
2 cups Cauliflower florets
1 cup Asparagus spears
2 tbsp Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 4 minutes of cauliflower steaming, add the asparagus spears to the steamer basket until they are bright green and crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2-3 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a food processor or blender with the Greek yogurt, minced garlic, and a pinch of salt, then process until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon fillet, and serve alongside the steamed asparagus with a fresh lemon wedge.
