Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served with garlicky sautéed green beans and nutty brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
5.5 ounces Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic
1 tablespoon Lemon Juice
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with a pinch of salt and black pepper.
Heat half of the olive oil in a medium non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until done.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet and toss in the green beans.
Sauté the green beans for about 5 minutes until they are tender-crisp and slightly charred.
Stir in the minced garlic and cook for 1 minute until fragrant.
Arrange the cooked brown rice on a plate and top with the seared salmon and garlic green beans.
Drizzle the entire dish with fresh lemon juice before serving.
