Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon fillet topped with a vibrant herb crust, served alongside tender asparagus spears and finished with a bright squeeze of lemon.
INGREDIENTS
7 oz salmon fillet
1 cup asparagus
1 tbsp extra virgin olive oil
1 tbsp dijon mustard
1 tbsp fresh parsley
1 tsp fresh dill
0.25 tsp sea salt
0.25 tsp black pepper
0.5 whole lemon
1 clove garlic
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel and place it on one side of the prepared baking sheet.
In a small bowl, whisk together the Dijon mustard, minced garlic, chopped parsley, and chopped dill to create a paste.
Spread the herb-mustard mixture evenly over the top of the salmon fillet.
Trim the woody ends of the asparagus and place the spears on the other side of the baking sheet.
Drizzle the asparagus with olive oil and sprinkle with sea salt and black pepper, tossing to coat evenly.
Roast for 12 to 15 minutes until the salmon is opaque and flakes easily with a fork and the asparagus is tender-crisp.
Remove from the oven and squeeze the fresh lemon over both the salmon and the asparagus before serving.
