Sheet Pan Salmon with Roasted Bell Peppers
Oven-roasted salmon fillet and vibrant bell peppers seasoned with aromatic herbs for a flaky, tender finish that bursts with citrusy brightness.
INGREDIENTS
7 oz Salmon fillet
1 cup Red bell pepper
0.5 tbsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Dried oregano
1 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
Slice the red bell pepper into thin, even strips and spread them across one side of the prepared sheet pan.
Place the salmon fillet on the other side of the pan, patting it dry with a paper towel to ensure a better roast.
Drizzle the olive oil over both the salmon and the bell pepper strips.
Evenly sprinkle the sea salt, black pepper, garlic powder, and dried oregano over the fish and vegetables.
Toss the peppers gently to coat and rub the seasoning into the top of the salmon fillet.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the peppers are tender with slightly charred edges.
Remove from the oven and immediately drizzle with fresh lemon juice before serving.
