INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp Fresh parsley
1 tbsp Fresh dill
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on one side of the baking sheet.
Drizzle 0.25 tbsp olive oil over the asparagus and season with the sea salt and black pepper.
Pat the salmon fillet dry with a paper towel and place it on the other side of the baking sheet.
In a small bowl, mix the Dijon mustard, chopped parsley, dill, and garlic powder.
Spread the herb-mustard mixture evenly over the top of the salmon and drizzle with the remaining 0.25 tbsp oil.
Roast for 12-15 minutes until the salmon flakes easily with a fork and asparagus is tender.
Squeeze fresh lemon juice over the salmon and asparagus before serving.
