PREPARATION
Preheat your oven to 400°F (200°C).
Press the extra-firm tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
On a large baking sheet, toss the broccoli florets and sliced red bell pepper with 1.5 tsp extra virgin olive oil, 0.25 tsp sea salt, and 0.25 tsp black pepper.
Roast the vegetables in the oven for 15-20 minutes until they are tender and show slight charred edges.
