Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with crisp garlic-infused green beans and nutty brown rice, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 ounces Wild Sockeye Salmon
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
2 cloves Fresh Garlic
1 tablespoon Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat a large non-stick skillet over medium-high heat and add half of the olive oil.
Place the salmon in the pan skin-side down and sear for about 5 minutes until the skin is crispy, then flip and cook for another 3 minutes until opaque.
While the salmon cooks, steam the trimmed green beans for 3 to 4 minutes until vibrant green and tender-crisp.
In a small pan, sauté the minced garlic in the remaining olive oil for 1 minute before tossing in the steamed green beans to coat.
Warm the pre-cooked brown rice in a small pot or microwave until steaming.
Plate the seared salmon over the brown rice with the garlic green beans on the side and drizzle everything with fresh lemon juice.
