Ground Turkey Stuffed Bell Peppers
Oven-roasted bell peppers packed with a savory blend of ground turkey and riced cauliflower, simmered in a zesty tomato sauce that emerges bubbling and fragrant.
INGREDIENTS
7 oz Ground turkey (93% lean)
2 medium Bell peppers
0.5 cup Riced cauliflower
0.5 cup Tomato sauce
1 tsp Olive oil
1 tbsp Parmesan cheese
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Slice the tops off the bell peppers and carefully remove the seeds and membranes from the inside.
In a large skillet over medium heat, add the olive oil and sauté the diced onion and minced garlic until translucent and fragrant.
Add the ground turkey to the skillet, breaking it apart with a wooden spoon, and cook until no longer pink.
Stir in the riced cauliflower, tomato sauce, dried oregano, sea salt, and black pepper, allowing the mixture to simmer for 3 minutes.
Spoon the turkey and cauliflower mixture into the hollowed bell peppers, pressing down gently to pack them tightly.
Place the stuffed peppers upright in the prepared baking dish and sprinkle the top of each pepper with parmesan cheese.
Cover the dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is golden.
