Seared Salmon Fillet with Herbed Quinoa and Sautéed Spinach
Pan-seared salmon served over fluffy quinoa tossed with fresh parsley and lemon, paired with garlic-sautéed spinach for a vibrant, buttery finish.
INGREDIENTS
4 oz Salmon Fillet
1/2 cup Cooked Quinoa
2 cups Fresh Spinach
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
1 tbsp Fresh Parsley, chopped
PREPARATION
Pat the salmon fillet dry with a paper towel and season lightly with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes until cooked through.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the remaining olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the fresh spinach to the pan and toss until just wilted, then remove from heat.
In a small bowl, fluff the warm cooked quinoa and stir in the lemon juice and chopped parsley.
Plate the herbed quinoa alongside the sautéed spinach and top with the seared salmon fillet.
