2 cups baby spinach

1 tbsp lemon juice
1 clove garlic

PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed yellow potatoes with half of the olive oil and a pinch of the sea salt and black pepper.
Spread the potatoes on the baking sheet and roast for 20-25 minutes until they are golden brown and tender.
Season the salmon fillet with the remaining sea salt and black pepper on both sides.
Heat the remaining olive oil in a large skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy.
Remove the salmon from the pan and set aside; add the minced garlic to the same skillet and sauté for 30 seconds until fragrant.
Add the baby spinach to the skillet and cook until just wilted, then stir in the lemon juice.
Plate the salmon over the bed of sautéed spinach and serve with the roasted potatoes on the side.
