Bring the rice to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
While the rice cooks, heat the coconut oil in a large skillet over medium-high heat.
Add the green curry paste to the skillet and sauté for 1 minute until the aromatics are released.
Add the chicken breast pieces to the skillet and cook for 4-5 minutes until browned on all sides.
Stir in the remaining 2 tablespoons of coconut milk along with the sliced red bell peppers and snap peas.
Simmer the curry for 5-7 minutes until the chicken is cooked through and the sauce has thickened slightly.
Season the curry with sea salt and black pepper, then fluff the coconut rice with a fork.
Plate the coconut rice, top with the green curry chicken, and garnish with fresh cilantro.
