Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with crispy roasted broccoli and creamy garlic cauliflower mash, finished with a bright squeeze of lemon.
INGREDIENTS
5.5 oz Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
1 clove Garlic
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of sea salt, then roast for 18 minutes until the edges are crispy.
While the broccoli roasts, steam the cauliflower florets until they are very tender, about 10 minutes.
Transfer the steamed cauliflower to a food processor or blender along with the garlic and Greek yogurt, blending until the consistency is smooth and creamy.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4 to 5 minutes per side until the exterior is golden and the fish is cooked through.
Plate the salmon over a generous bed of the garlic cauliflower mash with the roasted broccoli on the side.
