INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1 tbsp Ghee
2 cloves Garlic
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with sea salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until opaque.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the remaining ghee, and pulse until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and top with the seared salmon fillet.
