Spicy Calabrian Chili Shrimp Linguine
Sautéed shrimp tossed with al dente linguine in a fiery Calabrian chili and garlic sauce, finished with a bright squeeze of fresh lemon and vibrant parsley.
INGREDIENTS
8 oz Large shrimp
1.5 oz Dry linguine pasta
1 tbsp Extra virgin olive oil
2 cloves Garlic
1 tbsp Calabrian chili paste
0.5 cup Cherry tomatoes
1 tbsp Fresh lemon juice
2 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the linguine according to package directions until al dente. Reserve 1/4 cup of pasta water before draining.
While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium-high heat.
Season the shrimp with sea salt and black pepper, then add them to the skillet in a single layer.
Sear the shrimp for 1-2 minutes per side until pink and opaque, then remove them from the pan and set aside.
In the same skillet, add the minced garlic, halved cherry tomatoes, and Calabrian chili paste, sautéing for 2 minutes until the tomatoes begin to soften.
Add the cooked linguine and the reserved pasta water to the skillet, tossing to coat the noodles in the spicy oil.
Return the shrimp to the pan, add the fresh lemon juice and chopped parsley, and toss everything together until heated through.
Plate immediately and serve while the sauce is glossy and the flavors are bold.
