Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy cauliflower mash with crisp garlic-scented green beans, finished with a squeeze of bright lemon juice.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1.5 cups Cauliflower florets
1.5 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crispy, then flip and cook for another 3 to 4 minutes until cooked through.
In a separate small skillet, heat the remaining olive oil over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5 to 7 minutes until they are tender-crisp and the garlic is fragrant.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the Greek yogurt until smooth and creamy.
Serve the seared salmon over the cauliflower mash with the garlic green beans on the side, finishing with a fresh squeeze of lemon if desired.
