INGREDIENTS
300g Silken Tofu
0.5 cup Canned Chickpeas
3 tbsp Nutritional Yeast
2 cups Fresh Spinach
1 tbsp Soy Sauce
1 tsp Sesame Seeds
1 tsp Fresh Ginger, minced
1 clove Garlic, minced
PREPARATION
Drain and rinse the chickpeas, then pat them dry with a towel.
Carefully drain the silken tofu and cut it into large cubes, being gentle as it is very fragile.
Heat a non-stick skillet over medium heat and add the minced garlic and ginger, sautéing for one minute until fragrant.
Add the chickpeas and nutritional yeast to the skillet, tossing frequently for 3-4 minutes until the chickpeas are well-coated and slightly golden.
Add the fresh spinach to the pan and stir until just wilted.
Lower the heat and gently slide the silken tofu cubes into the pan, drizzling the soy sauce over the top.
Very gently fold the mixture together to warm the tofu through without breaking the cubes into a mash.
Transfer to a bowl and garnish with the toasted sesame seeds before serving.
