Season the chicken breast on both sides with half of the salt, pepper, garlic powder, and onion powder.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken to the pan and sear for 5-7 minutes per side until the internal temperature reaches 165°F and the exterior is golden brown.
Remove the chicken from the pan and let it rest on a plate.
In the same skillet, add the remaining 0.5 tablespoon of olive oil and the diced sweet potatoes.
Cover the skillet and cook the sweet potatoes for 8-10 minutes, stirring occasionally, until they begin to soften and brown.
Add the broccoli, bell peppers, thyme, and the remaining seasonings to the skillet.
Sauté uncovered for another 5-6 minutes until the vegetables are tender and slightly charred.
Slice the chicken and serve it alongside the warm vegetable medley.
