Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served over garlic cauliflower mash and steamed asparagus, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
8.8 oz Wild Salmon Fillet
2.5 cups Cauliflower florets
10 Asparagus spears
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, season the salmon fillet with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is flaky.
Steam the asparagus spears for 3 to 5 minutes until they are bright green and tender-crisp.
Drain the cooked cauliflower and place it in a food processor or bowl; add the remaining olive oil, minced garlic, and a pinch of salt, then blend or mash until smooth and creamy.
Plate the salmon over a generous bed of the garlic cauliflower mash, serve the asparagus on the side, and finish the dish with a fresh squeeze of lemon juice.
