7 oz Wild-Caught Salmon Fillet
2 cups Cauliflower Florets
1 cup Asparagus spears
1 tbsp Ghee

PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the ghee.
Once the pan is hot, place the salmon skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked to your desired doneness.
In the last 5 minutes of salmon cooking, steam the asparagus for 4-5 minutes until bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor with the remaining ghee, minced garlic, and a pinch of salt; process until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the asparagus on the side with a fresh squeeze of lemon juice.
