Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon and steamed green beans served over garlic-infused cauliflower mash with a finishing touch of bright, zesty lemon.
INGREDIENTS
6.5 oz Sockeye Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tsp Grass-fed Butter
1 tbsp Fresh Lemon Juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the same steamer basket until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the minced garlic and grass-fed butter until creamy.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden and the fish is cooked through.
Plate the garlic mashed cauliflower and green beans alongside the salmon and finish with a drizzle of fresh lemon juice.
