Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic cauliflower mash and steamed green beans, finished with a squeeze of lemon and a sprinkle of flaky sea salt.
INGREDIENTS
7.2 ounces Wild Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 teaspoons Ghee
2 cloves Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and add them to the steamer for the last 5 minutes of cooking until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet, skin-side up, and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145 degrees Fahrenheit.
Transfer the steamed cauliflower to a food processor or bowl, adding the minced garlic and the remaining teaspoon of ghee.
Blend or mash the cauliflower until smooth and creamy, seasoning with salt and pepper to taste.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans with a fresh squeeze of lemon.
