Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed green beans and creamy garlic-infused mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
2 tablespoons Non-fat Plain Greek Yogurt
1 clove Garlic, minced
1 teaspoon Lemon Juice
Pinch of Salt and Black Pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender and bright green.
While vegetables steam, pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a bowl or food processor; add the Greek yogurt, minced garlic, salt, and pepper.
Mash or pulse the cauliflower until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side with a drizzle of lemon juice.
