Succulent chicken breast slow-cooked with earthy rosemary and root vegetables in a rich bone broth for a comforting, melt-in-your-mouth experience.
INGREDIENTS
5.5 oz chicken breast
0.5 cup red potatoes
0.5 cup carrots
0.25 cup celery
0.25 cup yellow onion
2 tsp olive oil
0.5 cup chicken bone broth
1 clove garlic
0.5 tsp dried rosemary
0.5 tsp dried thyme
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Dice the red potatoes into one-inch cubes and slice the carrots, celery, and onion.
Place the prepared vegetables in an even layer at the bottom of the slow cooker.
Season the chicken breast on both sides with sea salt, black pepper, rosemary, and thyme.
Place the seasoned chicken on top of the vegetables and drizzle with olive oil.
Pour the chicken bone broth around the sides of the chicken and add the minced garlic.
Cover and cook on low for 6 hours or on high for 3 hours until the chicken is tender and the vegetables are soft.
Remove the chicken to slice or shred, then serve immediately with the vegetables and a ladle of the herb-infused cooking juices.
