6 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Asparagus spears
1.5 tsp Ghee
1 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic
1 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them on the baking sheet with 0.5 teaspoon of melted ghee and a pinch of sea salt.
Roast the asparagus for 12 to 15 minutes until tender and slightly browned.
While the asparagus roasts, steam the cauliflower florets until they are very soft, about 8 to 10 minutes.
Place the steamed cauliflower in a blender or food processor with the Greek yogurt, minced garlic, and a pinch of salt; process until smooth and creamy.
Pat the salmon dry and season with salt and pepper.
