Seared Salmon Fillet with Garlic Green Beans and Steamed Brown Rice
Pan-seared salmon and garlic green beans served over steamed brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
6.8 oz Wild Sockeye Salmon Fillet
0.5 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Fresh Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat a medium non-stick skillet over medium-high heat with half of the olive oil.
Place the salmon in the pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until opaque.
While the salmon cooks, heat the remaining oil in another skillet over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until tender-crisp and fragrant.
Warm the pre-cooked steamed brown rice in a small pot or microwave until fluffy.
Plate the salmon alongside the rice and garlic green beans, finishing with a fresh squeeze of lemon juice.
