Cook the turkey, breaking it up with a spatula, until it is fully browned and no pink remains.
Stir in the black beans and salsa, cooking for an additional 2 minutes until the mixture is well combined and heated through.
Arrange the bell pepper quarters on the prepared baking sheet and fill each scoop generously with the turkey and bean mixture.
Sprinkle the shredded cheddar cheese evenly over the top of each stuffed pepper.
Bake for 8 to 10 minutes, or until the peppers are slightly tender and the cheese has melted and become bubbly.
Remove from the oven and serve immediately with a dollop of Greek yogurt on each bite.
