PREPARATION
Dice the pork belly into small cubes.
Heat a large skillet over medium-high heat and add the pork belly, searing until crispy and golden brown.
Add the minced garlic and grated ginger to the pan, sautéing for 1 minute until fragrant.
Stir in the chopped kimchi and cooked brown rice, breaking up any clumps and tossing to coat in the rendered fat.
Push the rice mixture to one side and pour the egg whites into the empty space, scrambling them until just set before mixing into the rice.
