6 whole jumbo pasta shells
0.5 cup part-skim ricotta cheese
3 large egg whites
1 cup fresh spinach
2 tbsp parmesan cheese
0.5 cup marinara sauce
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp garlic powder
0.5 tsp dried oregano
PREPARATION
Preheat oven to 375°F (190°C).
Boil the jumbo shells in salted water according to package directions until al dente, then drain and set aside.
Steam the spinach until wilted, squeeze out all excess moisture, and finely chop.
In a medium bowl, combine the ricotta, egg whites, chopped spinach, parmesan, salt, pepper, garlic powder, and oregano until smooth.
Spread half of the marinara sauce on the bottom of a small baking dish.
