PREPARATION
Preheat your oven to 400°F (200°C).
Toss the cubed red potatoes with half of the olive oil, sea salt, and black pepper, then roast for 20-25 minutes until golden.
Season the strip steak generously with the remaining sea salt and black pepper on both sides.
Heat a cast-iron skillet over medium-high heat with the remaining olive oil until shimmering.
Sear the steak for 3-4 minutes per side, or until it reaches your desired level of doneness.
