Creamy Greek Yogurt Protein Cheesecake
A velvety protein cheesecake baked with Greek yogurt and a light almond crust, finished with a bright hint of lemon and a smooth, creamy texture.
INGREDIENTS
200g Nonfat Plain Greek Yogurt
18g Vanilla Whey Protein Isolate
46g Liquid Egg Whites
40g Low-fat Cottage Cheese
20g Almond Flour
1 tsp Vanilla Extract
1 tsp Lemon Juice
1 tbsp Monk Fruit Sweetener
PREPARATION
Preheat your oven to 325°F (160°C) and lightly grease a 4-inch mini springform pan or line a large ramekin with parchment paper.
Place the cottage cheese in a small blender and process until completely smooth and creamy.
In a medium mixing bowl, combine the blended cottage cheese, Greek yogurt, egg whites, vanilla extract, lemon juice, and monk fruit sweetener.
Sift in the vanilla protein powder and whisk the mixture until the batter is smooth and free of any clumps.
Press the almond flour firmly into the bottom of your prepared pan to create an even crust layer.
Pour the cheesecake batter over the almond flour base and smooth the top with a spatula.
Bake for 25 to 30 minutes until the edges are set and slightly golden, but the center still has a slight wobble when shaken.
Remove from the oven and allow the cheesecake to cool to room temperature on a wire rack.
Transfer to the refrigerator and chill for at least 3 to 4 hours, or ideally overnight, to allow the texture to fully set before serving.
