Kimchi Fried Rice with Pork Belly
Sautéed pork belly and tangy kimchi tossed with brown rice and protein-packed egg whites for a savory, umami-rich meal with a satisfyingly crisp texture.
INGREDIENTS
1 oz Pork belly
1 cup Egg whites
1 large Egg Egg
0.25 cup Cooked brown rice
0.5 cup Kimchi
0.5 tsp Sesame oil
1 tbsp Tamari
1 clove Garlic
1 tsp Fresh ginger
2 stalks Green onion
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Dice the pork belly into small, uniform pieces.
Heat a large skillet or wok over medium-high heat and add the pork belly, cooking until the fat renders and the meat becomes golden and crispy.
Add the minced garlic and grated ginger to the skillet, sautéing for 30 seconds until fragrant.
Stir in the kimchi and cooked brown rice, breaking up any clumps and allowing them to sear in the pork fat for 2 minutes until slightly toasted.
Push the rice mixture to the side of the pan and pour the egg whites and the large egg into the empty space, scrambling them until just set.
Fold the eggs into the rice mixture and drizzle with tamari and sesame oil.
Season with sea salt and black pepper, then garnish with sliced green onions before serving.
