Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until soft.
Drain the sweet potatoes and mash them until smooth, adding a pinch of salt if desired.
Trim the woody ends off the asparagus and place them on a baking sheet, tossing with half of the avocado oil and minced garlic.
Roast the asparagus in the oven for 10-12 minutes until tender and slightly charred.
Season the salmon fillet with salt and pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until cooked through.
Plate the sweet potato mash, top with the seared salmon, and serve the roasted asparagus on the side.
Finish the dish with a fresh squeeze of lemon juice over the salmon and vegetables.
