Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild-Caught Salmon Fillet
250g Cauliflower Florets
100g Green Beans
1 tbsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, then drain thoroughly and blend with half of the olive oil until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat with the remaining olive oil and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan.
In the same skillet, add the green beans and minced garlic, sautéing for 3-4 minutes until the beans are tender-crisp.
Plate the cauliflower mash, top with the seared salmon, and serve with the garlic green beans on the side.
