Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over a bed of creamy garlic-infused cauliflower mash and crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
400g Cauliflower florets
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
Salt, black pepper, and lemon wedges to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl; add the ghee, minced garlic, and a pinch of salt, then blend or mash until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 2-3 minutes until the internal temperature reaches 145°F.
Plate the garlic mashed cauliflower and green beans, top with the seared salmon, and serve with a fresh lemon wedge.
