Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served with garlicky green beans and creamy mashed cauliflower, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower florets
2 cloves Garlic
1.5 teaspoons Extra Virgin Olive Oil
PREPARATION
Pat the salmon dry with a paper towel and season with salt and pepper.
Steam the cauliflower florets until very tender, about 8 to 10 minutes.
Heat a half teaspoon of olive oil in a skillet over medium heat and sauté the green beans and minced garlic until crisp-tender.
Remove beans from the skillet and wipe it clean then heat the remaining teaspoon of olive oil over medium-high heat.
Place salmon skin-side down in the hot skillet and sear for 4 to 5 minutes until the skin is crispy.
Flip the salmon and cook for another 2 to 3 minutes until desired doneness is reached.
Drain the cauliflower and mash it using a fork or immersion blender until smooth while seasoning with a pinch of salt.
Plate the salmon alongside the mashed cauliflower and green beans then serve with a fresh lemon wedge.
