Chicken Tikka Masala with Basmati Rice
Sautéed chicken breast simmered in a velvety spiced tomato and coconut sauce, served over a bed of aromatic basmati rice.
INGREDIENTS
5 oz chicken breast
0.5 cup cooked basmati rice
0.5 tbsp ghee
0.5 cup tomato puree
2 tbsp full-fat coconut milk
0.25 cup yellow onion
1 clove garlic
1 tsp fresh ginger
1 tsp garam masala
0.5 tsp turmeric
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp fresh cilantro
PREPARATION
Dice the chicken breast into bite-sized pieces and season evenly with sea salt and black pepper.
Heat the ghee in a large skillet over medium heat and sear the chicken until golden brown on all sides.
Add the finely diced onion, minced garlic, and grated fresh ginger to the skillet, sautéing for 3 minutes until softened.
Stir in the garam masala and turmeric, allowing the spices to toast for 1 minute to release their oils.
Pour in the tomato puree and full-fat coconut milk, stirring to combine and scraping any browned bits from the bottom of the pan.
Reduce the heat to low and simmer the sauce for 10-12 minutes until the chicken is cooked through and the sauce has thickened.
Warm the pre-cooked basmati rice and plate it alongside the chicken tikka masala.
Garnish the dish with chopped fresh cilantro before serving.
