Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlicky green beans and mashed sweet potatoes, featuring a perfectly crispy skin.
INGREDIENTS
6 oz Wild Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 10-12 minutes.
Drain the potato and mash until smooth, seasoning with a pinch of sea salt.
Steam the green beans for 5 minutes until vibrant green and tender-crisp.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then place in the pan skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Remove the salmon, add the minced garlic and steamed green beans to the same pan, and toss for 1 minute.
Plate the salmon alongside the sweet potato mash and garlic green beans.
