Seared Salmon with Steamed Broccoli and Garlic Mashed Potatoes
Pan-seared salmon served over garlic-infused mashed potatoes with a side of tender steamed broccoli and a finishing squeeze of zesty lemon.
INGREDIENTS
5 oz Wild Atlantic Salmon
180g Yellow Potatoes
100g Broccoli Florets
12g Grass-fed Ghee
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Peel and chop the yellow potatoes into 1-inch cubes and place them in a pot of salted water.
Bring the water to a boil and cook the potatoes for 12-15 minutes until they are fork-tender.
While the potatoes boil, place the broccoli florets in a steamer basket over simmering water and steam for 5-7 minutes until vibrant green.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side up and sear for 4 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
Drain the potatoes and mash them thoroughly with the remaining ghee and minced garlic until smooth and creamy.
Plate the garlic mashed potatoes and steamed broccoli alongside the seared salmon.
Drizzle the fresh lemon juice over the salmon and broccoli just before serving.
