Remove the chicken from the oven, spoon the marinara sauce over the top, and sprinkle with the shredded mozzarella and the remaining tablespoon of parmesan.
Return to the oven under the broiler for 2-3 minutes until the cheese is bubbly and slightly browned.
While the chicken rests, sauté the zucchini noodles in a pan with the remaining olive oil for 2 minutes until just tender.
Serve the crispy chicken parmesan over the warm zucchini noodles immediately.
