Baked Whiting Fish with Lemon Garlic Green Beans and Brown Rice
Flaky whiting fillets baked with zesty lemon and herbs, served with crisp-tender garlic green beans and wholesome brown rice for a satisfying, citrusy finish.
INGREDIENTS
8 ounces Whiting Fish Fillets
0.5 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 tablespoon Extra Virgin Olive Oil
1 tablespoon Lemon Juice
2 cloves Garlic, minced
0.5 teaspoon Dried Oregano
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Pat the whiting fillets dry with a paper towel and place them on one side of the baking sheet.
In a small bowl, whisk together half of the olive oil, half of the lemon juice, dried oregano, salt, and pepper.
Brush the lemon-herb mixture over the fish fillets.
Trim the ends of the green beans and place them on the other side of the baking sheet.
Toss the green beans with the remaining olive oil, minced garlic, and a pinch of salt and pepper.
Bake in the preheated oven for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork and the green beans are crisp-tender.
Serve the baked whiting and garlic green beans over the warm cooked brown rice, drizzling any remaining pan juices and the rest of the lemon juice over the top.
