Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over a garlic-infused cauliflower mash with tender steamed asparagus, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 teaspoon Ghee
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
1 tablespoon fresh Lemon juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until just opaque.
During the last 5 minutes of salmon cooking, add the asparagus to the steamer basket with the cauliflower to lightly steam until bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor with the ghee, minced garlic, and a pinch of salt.
Pulse until the cauliflower reaches a smooth, mash-like consistency.
Plate the cauliflower mash first, top with the seared salmon, and serve the asparagus on the side.
Drizzle the entire dish with fresh lemon juice before serving.
