Beef and Rice Stuffed Bell Peppers
Tender bell peppers oven-roasted with a savory ground beef and brown rice filling, finished with a vibrant tomato sauce and a dusting of salty parmesan.
INGREDIENTS
7 oz ground beef
0 cup cooked brown rice
1 large bell peppers
0.25 cup tomato sauce
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp garlic powder
0.5 tsp onion powder
0.5 tsp dried oregano
0.5 tbsp grated parmesan cheese
PREPARATION
Preheat your oven to 375°F and lightly grease a baking dish.
Slice the tops off the bell peppers and remove the seeds and membranes from the inside.
In a large skillet over medium heat, brown the ground beef until fully cooked, then drain any excess fat.
Stir the cooked brown rice, sea salt, black pepper, garlic powder, onion powder, dried oregano, and half of the tomato sauce into the beef.
Place the peppers upright in the baking dish and fill each one generously with the beef and rice mixture.
Spoon the remaining tomato sauce over the top of each pepper and sprinkle with the grated parmesan cheese.
Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for another 10-15 minutes until the peppers are tender and the cheese is golden.
