Preheat your oven to 375°F (190°C).
In a medium-sized bowl, whisk together the large eggs, liquid egg whites, sea salt, and black pepper until the mixture is uniform and slightly frothy.
Place a 10-inch oven-safe skillet over medium heat and add the extra virgin olive oil.
Add the sliced cremini mushrooms to the skillet and sauté for 5-6 minutes until they have released their moisture and turned golden brown.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Stir the chopped fresh chives and parsley into the mushroom mixture.
Pour the egg mixture into the skillet, ensuring the mushrooms and herbs are evenly distributed.
Allow the eggs to cook undisturbed for 2-3 minutes on the stovetop until the edges are set and pull away slightly from the pan.
Crumble the goat cheese over the top of the egg mixture.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the center is firm and the top is lightly puffed.
Remove from the oven and let the frittata rest for 5 minutes before slicing into wedges.
