Preheat oven to 400°F.
Slice zucchini into thin ribbons using a mandoline or vegetable peeler.
Place zucchini on paper towels, sprinkle with sea salt, and let sit for 10 minutes to draw out moisture; pat dry.
In a skillet over medium heat, add olive oil and sauté minced garlic for 1 minute until fragrant.
Add ground turkey to the skillet, season with black pepper and oregano, and cook until browned and crumbled.
In a small bowl, stir together the ricotta, egg white, and chopped fresh spinach until well combined.
Spread 2 tablespoons of marinara sauce on the bottom of a small baking dish.
Layer zucchini ribbons, followed by a portion of the meat, more sauce, and the ricotta mixture.
Repeat layers until ingredients are used, finishing with a layer of marinara, mozzarella, and parmesan.
Bake for 25-30 minutes until the cheese is melted and the edges are bubbly.
