Spicy Turkey-Stuffed Jalapeño Poppers
Lean ground turkey and light cream cheese are stuffed into vibrant jalapeños and baked until the cheese is bubbly and golden.
INGREDIENTS
6 large jalapeños
6 oz ground turkey
0.5 tbsp olive oil
2 tbsp light cream cheese
1 oz shredded sharp cheddar cheese
0.25 tsp garlic powder
0.25 tsp onion powder
0.25 tsp smoked paprika
0.25 tsp sea salt
0.25 tsp black pepper
2 tbsp chopped green onions
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Slice the jalapeños in half lengthwise and use a small spoon to scrape out the seeds and white membranes.
In a skillet over medium-high heat, add the olive oil and brown the ground turkey until fully cooked and no longer pink.
In a medium mixing bowl, combine the cooked turkey, light cream cheese, garlic powder, onion powder, smoked paprika, sea salt, and black pepper until well incorporated.
Spoon the turkey and cream cheese mixture evenly into the hollowed-out jalapeño halves.
Place the stuffed peppers on the prepared baking sheet and sprinkle the shredded sharp cheddar cheese over the top of each one.
Bake for 15 to 20 minutes until the jalapeños are tender and the cheese is melted and bubbling.
Remove from the oven and garnish with fresh chopped green onions before serving.
